Sow all lettuce types—cut-and-come-again, Batavia, romaine, iceberg—mid-March to mid-August (winter strains until late August) 1 cm (½ in) deep. Start in modules to save seed and dodge slugs, or drill outdoors once soil is ≥ 7 °C / 45 °F. Transplant or thin to 30 cm (12 in) each way for airy heads and tender leaves. Grow in rich, moist, free-draining soil with plenty of light but some midday shade; mulch and water steadily to prevent bolting and bitterness. Stagger sowings every three weeks to harvest mid-May through autumn; winter lettuces sown in August cut from November to April under fleece or low tunnels.
