Sow curly endive mid-June to late July about 1 cm (½ in) deep, ideally in plug trays to curb slug damage, then transplant or thin at the 4-leaf stage to 30 × 40 cm (12 × 16 in) spacing. Grow in cool, fertile, free-draining soil and keep moisture steady to prevent bolting and bitterness. Harvest crisp heads from September until the first frost; if you prefer a paler, milder heart, tie the outer leaves together about 10 days before cutting.
