Sow beet seeds late March to mid-May, 1–2 cm deep in soil warmed to 15–20 °C / 59–68 °F, either direct or in a nursery bed. Thin or transplant to 10–15 cm / 4–6 in spacing. Loose, fertile, well-drained soil and steady moisture encourage plump roots. Harvest 3–3.5 months after sowing—any time July through autumn—when roots are golf-ball size or larger, depending on the cultivar.
